We were told fat was evil. Carbs good.
Then everyone got fat.
More and more evidence is coming to light, that while you shouldn’t go around drinking vats of lard, it’s really the carbs that are killing us.

Basically, it’s all about insulin. Carbs make insulin go up, thus fat gets stored and not used as fuel.
This is what I struggle with, finding the balance of taking in enough carbs to keep me fueled, but not too many as to spike my insulin and store fat. I’ve improved in my habits, but still have room to go further.
“carbs are killing you” is as bad as “fat is evil”. It’s all food & fuel. While you wouldn’t eat a plate of lard, a plate of pasta with just a smear of sauce is an equally unbalanced meal. Just eat reasonable amounts of normal food. Anything more complicated is made up by nutritionists to sell books/ideas – because you can’t make money out of “just eat normal food”!
One of the reasons that I had to fight with weight so much during my lifetime is that I have been insulin resistant all my life (which makes it hard to eat even small amounts of carbs), which finally culminated in Type II diabetes a couple of years ago. Even small amounts of carbs are a lot bigger enemy to me than moderate amounts of fat.
Geeze, you’re not going all Atkins on us are you? I swear that’s more religion than diet.

If anything, I’m preferring more paleo-style. But it’s more trying to be smart about what carbs I do ingest… but then, Wife makes some awesome cookies and it’s just too difficult to resist those. 😉
